Smokey & tender chipotle slow cook chicken stew
Admittedly not the prettiest dish when plated, but this recipe packs a bunch of flavour and is one of the most efficient things you will cook at home!
One pack of chicken breast gave us 3 servings, and saved us from putting in time that we don’t have on a very busy day just 24 hours before our trip.
Keep this recipe in mind when you need to clear the fridge of some veggies, but don’t have time to stick around the kitchen to make something from scratch , but you want something fresh and home cooked.
Prep time: 5 minutes
Cook time: 2.5 - 3 hours in the slow cooker
Serves: 3
Ingredients
500ml Chicken stock
400g Chicken breast
1/2 large Onion, diced
2 medium Carrots, diced (optional)
1.5 - 2 tbsp Chipotle sauce
Chipotle seasoning
1.5 - 2 tsp Garlic powder
Mixed herbs
Salt and sugar to taste
Notes
You may add your own variety of vegetables, or leave it out if you wish
Use a smaller amount of chicken stock if you prefer to make something less soupy which will be perfect for filling something like tacos or pita bread
Method
Chop onions and vegetables
Add chicken breast to slow cooker, along with chopped onions & vegetables
Add chicken stock, chipotle sauce, seasonings & herbs
Add salt & sugar, and mix well
Start slow cooker on HIGH for 2.5 - 3 hours
Once cooking is done, pull apart chicken breast, taste and adjust seasonings if needed. Enjoy!
Notes
This recipe works with frozen chicken breast, but it’s best to use fresh! Stick to 2.5 hours if you’re using fresh.
The flavour of this stew is highly customisable, so you can change what you add completely and still get a tender, pull apart chicken breast dish!
If you do not have a slow cooker, you may use a pot on low heat!
