Oil-free Crispy & Juicy Chicken with Buffalo Sauce

A recipe that reflects cookingatfff.com entirely. I started this blog because I wanted to share easy and healthy recipes everyone can make at home. I’m a huge believer that home cooked food can be just as good, if not better, than food you get outside of home. It’s pure joy to be able to eat a dish that would have been cooked with tons of oil, additives & unknowns at home with simple ingredients that do no harm to our bodies❤️ This is one of those dishes.

Cook time: 20 minutes

For this recipe, it will be made in the air fryer - the magical kitchen appliance that crisps food without oil! I haven’t tried this in the oven, but I’m sure it would take a longer time. This recipe can also be used for normal frying in oil over the stove if you don’t have an air fryer.

Before you cook and serve this, do note that it is highly encouraged to enjoy both chicken & buffalo sauce fresh & hot! The crispness of the chicken dredge may be lost when cooled, but we have tested after re-heating in the air fryer and it comes out crispy again:)

Ingredients for Air Fryer Chicken

  • 450g chicken thigh, cut into pieces if you wish

  • 1/2 cup all-purpose flour

  • 1/2 cup rice flour

  • 2 tsp salt

  • 1.5 tsp sugar

  • 2 eggs

Notes

  • Feel free to add your own seasonings & spices! I’ll keep the ingredient list simple as a basic recipe will make a dish that can be paired with any sauce or dip.

Method

  • In a tray or dish, mix all dry ingredients together

  • In a separate tray or dish, crack and beat the eggs

  • Pat dry chicken thighs with paper towels until it does not have any moisture

  • Coat with flour, then with eggs, and flour again - try to use different hands for wet & dry dipping so this process is less messy

  • Be sure to coat every layer evenly, not missing any spot. This is key to achieving a crunchy exterior! Shake off excess flour lightly

  • Preheat air fryer to 190ºC

  • Air fry dredged chicken thighs for 18 minutes, flipping at the 12 minute mark

Notes

  • Do note that every air fryer produces different results!

Combine all ingredients to make Buffalo Sauce

  • 2 - 3 tbsp melted butter

  • 1 tsp garlic powder

  • 2 tsp smoked paprika

  • 1 - 2 tbsp hot sauce of choice / sriracha

  • 2 tsp honey

  • salt to taste

Notes

  • It’s best to taste as you go so you can adjust the sauce to your preference! We don’t follow these measurements strictly, it depends on the flavour profile we are going for - sometimes more garlicky, other times with a stronger spice kick, etc
