Lunar New Year Fave: Bak Kwa Fried Rice

I look forward to this every year! Even yummier than straight out of the bag!

If you haven’t tried reheating or re-grilling bak kwa at home, it’s simply one of the best life experiences ever! I’m not a big fan of bak kwa or any Lunar New Year goodie, but grilled or air fried bak kwa is quite irresistible. In this recipe, we’re doing something similar, but pan frying bak kwa instead, do try!

Prep time: 5 minutes

Cook time: 20 minutes

Ingredients

  • Overnight and refrigerated rice

  • Bak kwa, cut into small strips

  • Eggs, beatened

  • Oil

  • Minced garlic

  • Frozen vegetable mix

  • Light soy sauce

  • Garnish - fresh chilli padi & spring onions

Notes

  1. Fried rice is an easy recipe that can help you clear the fridge, so just use what you have!

  2. For light soy sauce, I used about 1.5 tbsp for 2 - 3 servings of rice. Even this may not be precise to the portions you eat at home, so if you’re unsure, add lesser than what you would expect for a start, taste then adjust again. Other condiments are not needed as the bak kwa already adds a very distinct and loud flavour to the dish!

Method

  • Heat a large pan on medium to high heat, then add bak kwa strips in to pan fry until crispy & caramelised

  • Set aside, and to the same pan, add oil and then minced garlic

  • SautĂ© until fragrant then add in frozen vegetable mix

  • Once vegetables are defrosted, add rice in and stir fry well

  • Add soy sauce and stir fry until sauce coats the rice evenly, then push rice to the side of the pan

  • Add a bit more oil, and then add eggs in. Give it some time to cook just like how you would an omelette. Scramble it up and mix the eggs with the rice

  • Taste and adjust the flavour if you wish, then add bak kwa strips back in

  • Garnish with spring onions and cut chilli padi if you like! I personally think spring onions make a difference to egg fried rice!

Notes

  1. For the egg step, I do not pour eggs directly over rice or mix it with the rice while it is wet because that could result in the final dish being too wet. When the eggs are cooked separately from the rice, it adds another layer of texture and fluffiness to the dish!

Bak kwa fried rice is a favourite in our home during this Lunar New Year season. It’s definitely not an everyday dish, but it’s one way to enjoy this once-a-year goodie for festivities sake. Have a good one this year my friends🍊🍊
